Many of you will have enjoyed a NETTLE NOJITO at a WILD about tasting.  
When we make up a full 2 Litre pitcher we use the following recipe:

Fill the jug up with ice and add:
1 bottle of Nettle Syrup
2 squeezed limes
top up with sparkling water

To make an individual glass, work on a 6:1 - 8:1 dilution, plenty of ice, a squeeze of lime.

You can dilute straight with tap water, flat water, sparkling water or even hot water. You can throw a shot of Bacardi or vodka or even gin in for the craic!
It's a really refreshing drink. Great for a party, for cocktails and mocktails.

2 carrier bags of fresh young nettle tips
12 litres of water
1.5 kg sugar
60g cream of tartar
juice of 2 oranges
juice of 2 lemons
50g ginger (infusion bag)
yeast, as per instructions for volume


Boil water, take off heat, add nettles, put lid on and leave to infuse for at least one hour, but preferably overnight.

Strain through muslin.

Heat mixture only enough to dissolve sugar and cream of tartar, then add juice of orange and lemon and ginger spice bag (optional) and leave to cool to room temperature.

Then add yeast.

NOW cover with tea towl and leave in dark, warm place for 4-5 days

Then remove scum from surface of brew bucket, siphon into plastic bottles. Leave to settle in cool place, fridge is ideal, as they have a tendency to explode if left unchilled.

Wait 7 days. . .then it's finally ready to drink!
